Almonds and honey and were used in Al-Andalus for the manufacture of many sweets. Currently much of the Spanish pastries (especially in southern regions) still maintains this legacy with sweets such as nougat or marzipan. In northern Africa also maintains a traditional pastries based on honey and nuts.

The process is truly traditional and modern machinery but facilitate its industrial production and ensure a higher quality nougat sector continues to be guided by the same "recipe" as always.

We work exclusively Alicante nougat (nougat drive) and nougat Jijona (soft nougat).
